Cochinita Pibil
Is a traditional Mayan slow roasted pork dish from the Yucatán Peninsula. Preparation of traditional cochinita involves marinating the meat in citrus juice, adding annatto seed (which imparts a vivid burnt orange color) and roasting the meat in a píib while it is wrapped in banana leaf.
Our Cochininta Pibil comes with pickles, onions and green salsa.Cochinita is commonly served over rice or can be made into taco.
Chicharron
Classic Chirraron is deep-fried pork skin, usually, pork belly, which is seasoned and was traditionally fried in lard (its own fat released during cooking).
The Chicharron comes with chipotle salsa, cilantro and onions. Chicharron Carnitas is commonly made into tacos.
Our sides
Rajas con Queso (strips of roasted poblano peppers and onions)
